Blueberry Protein Pancakes



  • 1 scoop Vega Protein Powder
  • 1 banana, mashed
  • 1 tbsp Almond Milk
  •  2 egg whites OR 1/4 cup flax egg replacement*
  • 1 tsp cinnamon
  • 2 tsp chia seeds
  • Blueberries

*To make flax egg replacement 1 tbsp ground flaxseed with 3 tbsp water

Completely mash banana with the almond milk and gradually stir in remaining ingredients until batter is smooth. Spray low-fat cooking spray into skillet and turn on med-low heat. Slowly pour batter into pan and cook for 3-5 minutes on each side. Top with berries and drizzle with real maple syrup or agave nectar :)

Blueberries & Avocado Salad with Lime



  • 1 cup washed organic blueberries
  • 1/2 avocado, cubed
  • 1 tsp Chia Seeds
  • Juice from 1/2 lime
  • Stevia

In a bowl, add  blueberries, avocado and chia seeds. Whisk together juice of 1/2 a lime with a packet of stevia and pour over fruit, mixing all together gently.
