Hilton Head Island Farmer’s Market

I can’t think of anything I love more than Sunday farmer’s markets. I don’t know if its the colorful vegetables, the friendly farmers, or the nostalgic sense of community that gets my creative juices flowing. I went down to visit my mom in Hilton Head and had to stop by the adorable Bluffton Farmer’s Market. Seeing checkered picnic blankets and corn husks immediately takes me to summer picnic BBQ dreamland. I find it really important to support local farmers markets… not only is the produce organic, its so inexpensive and it’s likely that the produce was picked that week so its the ripest produce you can find. Also, you can trust the farmers not to tamper with your food, like putting fake coloring, flavors or GMO’s in it. At the grocery store, it’s likely you’re buying an imitation of an apple from Uruguay. So go out and shop at your farmer’s market! We deserve the right to know where our food comes from.

Watermelon Fresca

3 cups seedless watermelon

1/4 cup water

Juice of 1 lime

Handful fresh mint

1 packet Stevia

Directions:

Blend all ingredients together, serve over ice and enjoy!

Strawberry Spinach Salad with Lime-Pomegranate Dressing

This is one of my go-to summer salads that is light and fruity but still has depth with the pine nuts and feta and a little spanish kick from the cumin. This is my favorite salad to serve at BBQ’s and family dinners, everyone seems to LOVE it.

Ingredients:

  • 1 cup Spinach
  • 2 cups Butter lettuce
  • 8 Strawberries, sliced
  • Avocado, cubed
  • Crumbled feta
  • 1/2 cup Pine Nuts

Dressing:

  • 2 tbsp fresh Lime Juice
  • 2 tbsp Pomegranate juice
  • 3 tbsp Apple Cider Vinegar
  • 1 stevia packet
  • 1/4 tsp ground cumin
  • 3/4 tsp salt
  • 1 tbsp maple syrup
  • Olive Oil (about 2 tbsp)

In a separate bowl, mix lime juice, pomegranate juice, apple cider vinegar, stevia, cumin, salt, maple syup and drizzle while whisking in olive oil until it’s a dressing-like consistency. Toast pine nuts over low heat in small skillet, stirring constantly so it doesn’t burn. In a big bowl, add spinach, sliced strawberries, avocado, pine nuts. Pour dressing over salad and top with crumbled feta to your liking.
